Crepe Bar Baby Shower

Our sweet friend Michelle is having a baby girl in a few weeks.  It is her second baby, but we wanted to throw her a little shower because it's her first girl.  Girl things are just so fun!  Our awesome friend Claire threw together some adorable flowers and banner.  Kelsey whipped up an amazing crepe bar.  Come to find out, Kelsey's family owned a Crepe shop in Provo many years ago.  Needless to say, she was a pro and her crepes and toppings were bomb.  I made the invites and used my house.  It came together great, was easy and stress free, delicious, and such a fun night.   We are excited to meet meet this cute baby next week.

Homemade Granola


When Bryan and I were first married, we lived with my grandparents.  My cute Grandma spoiled us and always ensured we were well fed while Bryan finished at BYU and I was in the nursing program.  She frequently kept homemade granola on hand.  Not only does it taste delicious, but makes the house smell heavenly.  Bryan and I have been trying to limit our sugar intake, and in lieu of store bought cereal we'll throw granola on greek yogurt or eat with almond milk.   McKay loves to help in the kitchen and gave some granola to his preschool teacher as part of his preschool graduation thank you gift.

Grandma's Homemade Granola

4 cups rolled oats
2 cups nuts (can use a variety of sliced almonds, sunflower seeds, pecans, Chia seeds, walnuts, cashews)
1 cup coconut (or as much as you want)
1/3 cup oil
½ cup honey or maple syrup
1 teaspoon vanilla extract
1 tablespoon ground cinnamon
1 cup raisins or other dried fruit

Mix oats, nuts, dried fruit in a large bowl and stir.  In a separate bowl mix the remaining ingredients.  Pour the liquid mixture over the dry ingredients and stir until coated.  Bake at 300 degrees for 10 minutes, stir and cook for another 10 minutes.  Cool completely and store.

Chocolate Heaven and Spring Fashion Lecture


I am a young women, youth leader.  Tonight we had one of the young women's uncles, who is a fashion writer, come speak to them about how to stay modest while keeping with current fashion trends.  Of course we needed treats, because its not a party without cake!  This is our favorite chocolate cake recipe adapted from the Oh She Glows cookbook.  I used all white instead of part wheat and used real butter.  We are eating cake, right? I also increased the proportions for the frosting because we love our frosting!  Bryan raves about this recipe, and we try to think of any excuse we can for cake.  I love Jane's little chocolatey fingers in the picture above.  You can tell it is not her first.

 Chocolate Cake Recipe- Adapted from Oh She Glows Recipe
2 cups almond milk (or milk of choice)
2 tablespoons apple cider vinegar
1 1/2 cups sugar
2/3 cup melted coconut oil
2 tablespoons vanilla
3 cups flour
2/3 cup cocoa powder
2 teaspoons baking soda
1 1/4 teaspoon salt

Chocolate Buttercream Frosting:
3 cups powdered sugar
1 cup cocoa powder
1/2 cup butter
pinch of salt
2 tsps vanilla extract
4 to 4 1/2 tablespoons almond milk

Mix the milk and vinegar and set aside.  Stir in the rest of the ingredients and beat until smooth.  Bake at 350 for 21-25 min if making cupcakes and 30-35 min for a cake with two 8 inch round pans.   Mix all frosting ingredients except the milk, then stir in milk a little at a time.




The fashion writer told us about some Spring 2016 trends.  He said all Eras were in, but the 70s are the most relevant right now.  Ani McGraw in Love Story is one of the biggest inspirations in the current fashion trends.  Some of these trends include fringe, polyester, straight middle parted hair, leather, bell bottoms, faux fabric (denim that looks like silk and cotton that looks like denim).
Other tips he gave:

  • Everyone needs a full length mirror.  Guess standing on my bath tub doesn't cut it!
  • If you are going to wear oversized clothing, get men's clothing because it is edgier.  Guess Lauren knows what is up! 
  • 3 essential items in a wardrobe are a trench coat cinched at the waist, a killer handbag, and killer heels.
  • Anyone looks on trend with a trench coat, red lips and dark sunglasses.  
  • Black and white is always classy
  • Nude nails and makeup are in.
  • First gratitude for your clothes, then attitude, wear with confidence
  • Your style represents where you are or want to be.  
  • Dress for yourself, not anyone else!

Now I need to watch Love story for fashion inspo.  Several of the girls said they wore baggy shirts, big coats or basketball shorts every day.  He tried to convince them to develop their style, and that it doesn't have to be expensive.  He motivated me to improve my "mom style" of hair pulled into a braid or a bun and whatever comfy leggings and shirt I find first.  Trench coat, red lips, dark sunglasses here I come!  Too bad that's not realistic for toasty, humid Texas.

I'm happiest at the top of a mountain by the ocean with my favorite people.  I have conflicting passions of health and baking. Married Bryan in 2008 and have 3 babies (McKay 5, Jane 3, and Eleanor 7 months).  I'm an RN, but being a mom is the most rewarding, beautiful job.  Dance parties, especially "High Pants Parties" when Bryan comes home from work, are my favorite.

I love lake days, disneyland, and bike rides on beach cruisers.  I did a study abroad in Jerusalem and lived in Argentina for 1 1/2 years and I dream of other places I can travel to in the future.  I have been teaching 1st grade in Utah for 3 years and I love my sweet students and everything I learn from them.

I am almost a BYU graduate...and almost a married lady.  Almost.  I like to copy Kara's life sometimes, so I also did a study abroad in Jerusalem, and also served a church mission, but in the south and then in Brazil...I'm so original.  I love food, sunny days, time spent with family and friends, and cuddling.  I thoroughly enjoy laughing, and making people laugh.  My favorite grammatical punctuation is an ellipses...
