When Bryan and I were first married, we lived with my grandparents. My cute Grandma spoiled us and always ensured we were well fed while Bryan finished at BYU and I was in the nursing program. She frequently kept homemade granola on hand. Not only does it taste delicious, but makes the house smell heavenly. Bryan and I have been trying to limit our sugar intake, and in lieu of store bought cereal we'll throw granola on greek yogurt or eat with almond milk. McKay loves to help in the kitchen and gave some granola to his preschool teacher as part of his preschool graduation thank you gift.
Grandma's Homemade Granola
4
cups rolled oats
2
cups nuts (can use a variety of sliced almonds, sunflower seeds, pecans, Chia
seeds, walnuts, cashews)
1
cup coconut (or as much as you want)
1/3
cup oil
½
cup honey or maple syrup
1
teaspoon vanilla extract
1
tablespoon ground cinnamon
1
cup raisins or other dried fruit
Mix
oats, nuts, dried fruit in a large bowl and stir. In a separate bowl mix the remaining
ingredients. Pour the liquid mixture
over the dry ingredients and stir until coated.
Bake at 300 degrees for 10 minutes, stir and cook for another 10
minutes. Cool completely and store.
